life lately

It has been so gloomy and cold lately. Where did you go Spring? My belief is the perfect way to
brighten up your mood is to wear bright colors, and I did just that well at least in terms of 
accessories! I hope to be back on a regular schedule of posting.

Recipe: Pho

Here is a Pho reciepe that I tried earlier this week.

4 stalks of baby bok choy
2 cloves of garlic {minced}
1 tsp. grated ginger
1 jalapeno {minced}
1/4 cup of green onions
 2 tbsp. Sesame Oil
2 tbsp. Rice Vinegar
2 tbsp. Soy Sauce
6 cups vegetable broth
1 pound of Udon noodles
Salt to taste

cilantro, sprouts, and siracha to garnish


To make the broth, heat a large pot over medium-high heat. Add garlic, ginger, bok choy, and salt stirring occasionally for 5 minutes. Next add the jalapeno and green onions. Cook for another 2 minutes. Add the vegetable broth then turn the heat to medium-low, and let simmer for 5 minutes. In the mean time cook the noodles, strain, and put aside.

Next add the rice vinegar, soy sauce, and sircha (optional). Let simmer for another 2 minutes. Finally add in the noodles and finish cooking. Garnish with cilantro and sprouts.
Serves 4 to 6 people.

My favorite color is: blue blue blue 
My home decor color palette includes: clean lines neutral colors with subtle color and unique pieces
If you were to look in my closet most of the colors you'd see would be: black, white, and 
blue. However, I'm trying to be experimental with my color choices. 
My favorite way to waste time is: spending endless hours on youtube and pinterest.   
Right now I could really go for: a warm breeze, crystal clear blue water, a sandy beach, 
and a strawberry margarita!
This weekend I will be: catching up on sleep, working on cover letters, making jewelry, 
painting my nails, and cuddling with my kitty :)

Happy Hump Day!
This week has been a drag. I feel so sleep deprived, and can't wait to 
catch up on sleep this weekend. I found a recipe for kale chips that I'm 
trying tonight. Thanks Pinterest! On a bright note, can you believe these 
jeans were only $13? I initially bought them to wear with boots in the 
winter, but they work great as ankle grazers too!

Happy Wednesday! What do you think of my haircut? I can't seem to get a grasp around it, yet.
I haven't had my hair this short since the 5th grade. I like change, so this will work!

avocado hair mask

1 ripe avocado 
2 tbs. of olive oil
1 egg (room temperature)

Mix all the contents in a bowl. 
Apply to hair focusing on the ends. 
Leave on for 30-40 minutes.
Shampoo and condition like normal.

Especially good for dry damaged hair that is in need of moisture. 
This mask will strengthen and fortify your hair taking it from brittle to soft and shiny.

I cut 7 inches of my hair off. See the results of this mask and my new hair on tomorrow's post.
