Healthy Happy Glow #002

Healthy: Be conscious about your food intake. If you truly want to understand where the majority of your foods comes from, and how it is processed I suggest you watch the movie, FOOD INC. It will provide you with a deeper understanding about the products that you are consuming daily. To be able to live a lifetime, you must begin with the proper treatment of your body. You only have one, there are no exchanges or returns.

Happy: Enjoy a cup of hot coffee (or any hot drink of your choice) on a cold, rainy, gloomy, snowy or even a sunny day. It brings an instant sensation  of "Ahhhh" and a state of relaxation to the mind and body. Why not grab a good book too?

Positivity: Write a letter to yourself detailing all the things that make you one of kind. Include all the things that you like about yourself, why you love yourself and what inspires you. Self growth begins with self love. Save this letter for those tough days when you're feeling down, when you need a pick-me up. Reading positive words about yourself will help you focus on all of your amazing qualities, talents and gifts, but will also invoke a sense of appreciation within you. How you talk to yourself is a great representation of what you think of yourself, so write yourself a heart-filled letter with love.

Chia Seed Pudding

My new favorite go to breakfast of late has been Chia Seed Pudding. It reminds me of Tapioca pudding, but so much healthier and better for you. Chia seed is a superfood that helps you lose weight, reduce cravings, makes you feel full faster, and are rich in Omega-3. They just may be one of the healthiest things around and a great addition to your diet! 

Yields: 1 serving or 2 snack size servings


  • 1/2 cup of Almond Milk
  • 1/2 cup of Coconut Milk
  • 2.5 tbsp of Chia Seeds 
  • Honey or Agave to taste
  • Blueberries, Peaches, Strawberries or Banana
  • Sprinkle of Coconut Flakes
  • Optional toppings: silvered almonds or raisins

  • Instructions:

  • In a bowl stir together Chia Seeds and Milk. 
  • Cover and refrigerate overnight or let sit for about 15 minutes 
  • Transfer to saucepan and heat over medium-low heat if you want it warm
  • Add fruit, coconut flakes and agave/honey

  • Enjoy!

    Bit Bold

    I have to admit this is only the third time I've worn these pants, you know cause they are a bit bold. In a conscious decision to recycle and make better use of my clothes, I pulled these eye catching pants out. I was definitely catching eyes as I perused out and about. In life if you don't take risks or experiment you don't grow and learn. So here is to growing and learning!

    Healthy Happy Glow #001

    I am starting a new series on the blog titled, "Healthy Happy Glow" which will be posted every Friday. I will be sharing fun, inspiring, motivating and empowering messages and tips on living a healthy, happy and glowing life. If you haven't read the About Me page yet, go read it. It will give you a better understanding of what direction I am taking the blog in. Enjoy and thanks for reading!

    Healthy: If your a soda drinker, then cut down on your soda intake. That means substitute at least one drink with another healthier option such as water, orange juice, milk, or tea. The point here is to cut down on the "empty calorie" intake that consist of water (carbonated), a sweetener, and a flavoring agent (chemicals). Here is a fun fact, the consumption of sugary soft drinks usually leads to weight gain, type 2 diabetes, cavities, and low nutrient levels. So if you're trying to get healthier, ditch the soda and opt for a better option. Fyi...I've not had soda/pop/caffeinated beverages for almost 2 years now. If I can do it then you can too! 

    Happy: Want to instantly boost your mood, and feel happier? Listen to your favorite song! If you don't have a favorite song, then listen to the kind of music you like. By doing this you'll feel re-energized and motivated. Here are a few song suggestions "Stronger" by Kelly Clarkson, "The Climb" by Miley Cyrus and "Lose Yourself" by Eminem. 

    Glow: Here is a simple way to make love go around, compliment someone. A simple compliment can do wonders for a person's self esteem and its an act of kindness. Not only will you make their day a little brighter, but you'll also feel satisfied for making someone else feel good.

    Its no shocker that my all time favorite color is blue, especially sky blue and ocean blue. I wanted to wear something that was a resemblance of both the sky and ocean, but fun and effortless at the same time.     To be amongst nature, the sky and the water is absolutely my favorite way to unwind, relax and take a moment to appreciate this beautiful life. Often times it's the moments, the now we overlook because we're so caught up on the big picture, but the tiny moments, living in the now and those conscious decisions you make everyday paint that big beautiful picture. Take the time today to just stare at the sky, sit by the water, walk barefoot in grass, smell the flowers, hug a tree or even watch the sunset. Reconnect and rekindle.

    Mini Moments

    Standing at the edge of the pier as the strong winds ran through my hair and the lingering smell of algae went up through my nose into my consciousness; I suddenly felt reawakened. As the winds picked up and sped through the air as if they were running a marathon, a slow sensation came over me: of how good it feels to be alive, to be healthy and to be able to experience the most simple pleasures of life. In this moment a surge of gratitude came over me and a deep commitment to acknowledge it, to take it all in.

    I believe its moments like these that awaken our spirit, our soul to guide us to self-realization. We all experience it, and its arousal is caused by different things and situations, but the beautiful thing about it is that, as human beings we all can relate to this feeling, this one jolt of awareness. How have you experienced this a jolt of awareness?

    Banana Blueberry Muffins

    Since having gone gluten-free and wheat-free, I've been experimenting a lot with recipes to find substitutes for breads, muffins, pancakes, pies, etc. This recipe is gluten-free, wheat-free and dairy-free. Ever since I've switched over to eating clean, I've noticed a huge difference in my appetite and stomach. No more bloating and that full feeling. I've been having these muffins for breakfast either alongside a smoothie or fresh fruit. This is a very easy recipe to follow and I hope you will try it! 

    • 2 flax eggs (2 Tbsp flaxseed meal + 5 Tbsp water)
    • 2 ripe bananas
    • 1 cup frozen (or fresh blueberries)
    • 3 Tbsp agave nectar, maple syrup or honey if not vegan
    • 3 Tbsp unsweetened vanilla or plain almond milk
    • 1 tsp pure vanilla extract
    • 1 tsp baking powder
    • 1 cup almond meal (ground from raw almonds)
    • 1/2 cup + 2 Tbsp oat flour (ground from GF oats) *do not use quick oats 
    • Optional toppings: chopped nuts, rolled oats, crumb topping
    1. Preheat oven to 350 degrees F and line a muffin tin with 8 paper liners.
    2. In a large bowl, prepare flax egg by mixing flaxseed + water and letting rest in the refrigerator for 15 minutes (this will allow it to get sticky/gooey like an egg).
    3. Next add bananas and mash. Add agave, baking powder, vanilla, almond milk and stir.
    4. Add almond meal and oat flour and stir once more. Taste to see if it needs more sweetener. Now carefully fold in the blueberries. 
    5. Bake for 25-30 minutes or until a tooth pick or knife inserted into the center comes out clean
    6. Remove and let rest in pan for 5 minutes. Then cool all the way on a cooling rack.
    7. Store in an airtight container or covered with plastic wrap for several days. Freeze or keep in refrigerator for longer storage.

    I absolutely love the color combo of white and navy, its very sophisticated and will forever be in style. Sometimes a clean crisp look is perfect all on its own with minimal accessories. It works out well for me because I usually always forget to accessorize with jewels, I am working on that

    I picked up this Gap tee for $4 only! I love a good bargain, and I've been getting so much use out of it. I'll probably style it with something else, just to show how versatile it really is. In other news my summer evenings are being spent by the lake running or people watching.
