June Summer

Doesn't the title of this post sound like someone's name?

I have been off the blogging radar for a long long long time now. I do plan on being more active with this blog during the course of the summer, but no promises. I like not having to schedule a post, think of an outfit to wear, take pictures, etc. I want to blog just because its fun and I love capturing memories. Photographs are like momentos of time and a life well-lived!

Let's Eat: Raw Vegan Banana Ice Cream

If you follow me on Instagram {@dearkajal} you've probably seen me post pictures of banana ice cream and banana smoothies. Lately, its been my go to food of choice! Why? Bananas are amazing for you, are easy to digest, are a high carb/low fat food and give you so much energy. To make banana ice cream:
1. Frozen bananas 
2. Coconut water 
3. Blender/food processor 

Blend up frozen bananas with a splash of coconut water. Thats it. It's literally that simple! For toppings you can add coconut flakes, chopped bananas, goji berries, cocao nibs, dried mulberries, etc.  

The picture on the left is banana ice cream with a sprinkle of cinnamon and coconut flakes, and the picture to the right is banana ice cream with a chocolate date sauce with goji berries. 

To make the chocolate date sauce: Blend up medjool dates with raw organic cocao powder and a splash of coconut water. Use however many dates you like to get the amount you desire. I used roughly 10-15 medjool dates and a generous sprinkle of cocao powder plus a splash of coconut water to make this yummy chocolate sauce. I promise you won't miss chocolate anymore, and the great thing is you can eat as much of it as you want! I even freeze it, so I can cut it into squares and eat it like chocolate!

Red Rocks

It snowed in Colorado yesterday and it melted very quickly as well. I got to experience a huge snow cloud come down the mountain and sprinkle snow on top of me while at Red Rocks Park. Then five minutes later the sun came out again. I appreciate that the weather changes very quickly here! 

These pictures are from the Red Rocks Park where I got to experience a fresh blanket snow resting on top of bright red rocks jutting out of the mountain. It was definitely an amazing experience and an incredible view!
